Instructions:In a bowl, whisk together soy sauce, 1 tablespoon sesame oil, maple syrup, rice vinegar, garlic, ginger, and gochujang Add cubed tofu to a shallow dish and pour the marinade over it Let it marinate for at least 30 minutes Heat the remaining tablespoon of sesame oil in a large skillet over medium heat Add the marinated tofu and cook until browned and crispy on all sides, about 10 minutes In the meantime, prepare quinoa according to package instructions and stir-fry the mixed vegetables until tender-crisp To assemble the bowls, divide cooked quinoa among serving bowls Top with stir-fried vegetables and Korean BBQ tofu Garnish with sliced green onions and sesame seeds Serve hot and enjoy!
