Instructions:Preheat your oven to 350F 175C and line a baking sheet with parchment paper In a small bowl, prepare the flax egg by mixing ground flaxseed and water Let it sit for 5 minutes to thicken In a large mixing bowl, combine the rolled oats, almond flour, coconut sugar, chopped Medjool dates, chopped walnuts, baking soda, ground cinnamon, and salt In a separate bowl, whisk together the melted coconut oil, maple syrup, prepared flax egg, and vanilla extract Pour the wet mixture into the dry mixture and stir until all ingredients are well combined Using a cookie scoop or your hands, form cookie dough balls and place them on the prepared baking sheet Flatten each ball slightly with your fingers or the back of a spoon Bake in the preheated oven for 12-15 minutes or until the edges turn golden brown Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely Once cooled, store the gluten-free oatmeal date cookies in an airtight container Enjoy!
