Carrot Cake Pops

Indulge in these delightful carrot cake pops that combine the goodness of carrots with the sweetness of cream cheese frosting, coated in a rich layer of chocolate. Perfect for a fun and tasty treat!

Ingredients:

  • 1 1/2 cups shredded carrots

  • 1 cup all-purpose flour

  • 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1 cup finely chopped walnuts or pecans

  • 1 cup cream cheese frosting

  • 2 cups white or dark chocolate melts

  • Cake pop sticks

  • Sprinkles or crushed nuts for decoration

Instructions:

Preheat the oven to 350F 175C


In a large bowl, mix shredded carrots, flour, brown sugar, granulated sugar, vegetable oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt until well combined


Fold in the chopped nuts


Pour the batter into a greased and floured cake pan


Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean


Let the cake cool completely


Crumble the cooled cake into fine crumbs in a large bowl


Add cream cheese frosting and mix until well combined


Shape the mixture into small cake balls and place them on a lined baking sheet


Insert cake pop sticks into each ball


Chill the cake pops in the refrigerator for at least 1 hour


Melt the chocolate melts according to package instructions


Dip each cake pop into the melted chocolate, covering it completely


Decorate with sprinkles or crushed nuts while the chocolate is still wet


Allow the chocolate to set by placing the cake pops back on the lined baking sheet


Serve and enjoy your delicious carrot cake pops!
